Got a "smoking" deal on Veterans Day for the Brazos. Couldn't wait to upgrade from using a Chargriller smoker for many years. After I got it home, a few neighbors helped me unload and into my back yard (this baby weighs in close to 500lbs).
Using high-temp RTV, I sealed the deflection plate in place. Then wiped the entire inside with olive oil and dumped a canister of coals and a couple of oak logs in the fire box to season and see where I was losing smoke.
I added three temp gauges using the predrilled top and installed two more at grate level, one on the firebox side and one at the flu side.
I lined the barrel door and both doors of the fire box with fiberglass stove tape to get a better seal. dumped in two canisters of coals and more oak.....now the loss of smoke had greatly decreased however the top gauge registers 10 to 15 degrees hotter than the bottom two..
I added 7 tuning plates in the barrel that fit perfectly alongside of the deflection plate and the temp gauges now register within two degrees of each other.
After fabricating a charcoal box, maintaining uniform burning inside the firebox is top shelf.
The Brazos may not be the very top of the line smoker but by golly after these simple modifications, it's now a flagship smoker!
